Week 30: Coconut Banana Bread

A great variation of a my usual banana bread. This turned out better than I thought it would. Loved it!

Week 27: Blueberry Croissant Puff

This ended up being a slightly less sweet blueberry danish and I loved it! I think I was the only one who actually ate it, but it was lovely.

Week 28: Margarita Cake

This was very yummy! I will definitely make it again. And maybe this time, one of my sponges won’t break in half out of the pan making icing it a pain in the butt.

Week 29: Orange Cardamom Crumb Cake

The crumb ended up being really thick compared to the orange cake portion, and I just didn’t love it. Next time, I will cut the crumb down by at least 1/3 to help balance the flavors.

Week 21: Cake Batter Blondies

The kids loved these treats on the Fourth of July. And I thought they were pretty good too.

Week 23: Blueberry Muffins

These are the best blueberry muffins that I’ve ever had or made. They are absolutely amazing! These need to go into our regular rotation.

Week 24: Oatmeal Banana Bread

This turned off very dry and dense. I’m not sure if it was an issue with our oven or the rising agents, but it did not work well at all.

This was a very yummy breakfast cake. Will make again.

Another good breakfast cake. I best this would be better with fresh cranberries.

2022 Plan

2021 did not work out for our plan of making 52 Desserts and Snacks. So I’m breaking all my rules and extending this challenge into 2022. We are going to continue with last year’s plan and just add on.

Week 1: Cranberry and White Chocolate Cake

This was such a tasty and easy recipe to start off the year. I loved the tart cranberries and extra sweet white chocolate chunks scattered through this simple cake. Arthur also loved it!

Week 2: Peanut Butter Cookie Gooey Bars

Oh so incredibly good! Next time I should use less condensed milk (just a tad too much), but I loved the balance between peanut butter and chocolate flavor.

Week 3: Earl Grey Tea Bread

Another great recipe! I have some ideas of how to tweak it (smaller prune pieces for one), but this was great as is toasted with a bit of butter and a cup of tea.

Week 4: Sicilian Apple Cake

I liked the taste of this one, but it just didn’t really hit for me. For one, I dislike raisins and unfortunately the ones of the top got really hard. the cake portion didn’t bake like I wanted it to.

These were amazing! i was afraid that these would be too sweet, but they have a great balance of flavors. Definitely will make these again.

2021 Desserts and Snacks

And just like that we are onto our third yearly food project. First year was grilled cheese (got a bit repetitive) and our second year was Soups and Stews Around the World (loved it), so this year I wanted to go a completely different direction. We are going to strive to make 52 New-to-Us Desserts and Snacks. Some will be recipes that I’ve had for a long time but never made. Some will be completely new. Some will be ones that are recommended from friends. Some will be ones that I purposely seek out. Whatever form they my take, all our recipes will be ones that we have never attempted before. I am going to try and balance our heavy desserts with lighter breakfast-style baked goods and interesting snacks (some might be more like appetizers). I’ve got a Pinterest board full of possibilities, a few options already in Paprika, and a stack of recipes books on my floor all ready to dive into this year’s project!
